Well all you need to do is turn right when leaving the NI-BMW show and you're striaght on the Antrim Coastal route that will take straight to the Giants Causeway if you so wish! :D:D:D
If you're up that way then its definatley worth going over Torr Head.
As Listermint says, Donegal should get a hit, great drives to be had. The Atlantic Drive around Fanad head and Downings etc is a must! There is a couple of decent hotels in Downings.

How about the Ring of Kerry Eamo? Have a romantic dinner and stay in Sheen Falls while you're nearby.

The coast Road from Dungarvan to Tramore (40mins) is a real 'TopGear' road. It has everything. There are two decent straight stretches mixed between winding slow/fast bends, both uphill and downhill. The scenery is also second to none.
Before Dungarvan, you should visit Ardmore, very picturesque. After Tramore you need to visit Dunmore East. All this could potentially be done in one day.

RE: Irish Road Trip
The road between Lisdoonvarna and Ballyvaughan is a cracker, particularly the Corkscrew section. You need to be up early to avoid the campervans, buses, rentals, cyclists etc but well worth it.
