Not 100% but think it is basically
1 star = just getting start
5 star = regular poster and contributor
Could be wrong there Dean im sure one of the other Admins will know more they are the techies

No the stars are just to differentiate different types of members - traders, moderators, regular members, etc
However, the title underneath that again will change for members the more you post

Click User CP, Longside the Log-Out... Go to edit profile on the left and then insert whatever in the Custom User Title box.
