If you can wait a few days why not use oponeo.ie? Usually very good value

John Bass in Gorey is normally pretty good. Also you could try Adamstown tyres in New Ross or there's Parles in Oulart. Have used the first and last with no issues.
So far, looks like it's gonna be an online order. Premium tyre prices online for mid-range to ditch finder prices here. Must have tried a dozen places by phone this morning in Dublin (in the office) and the only pair of 275/30/19 to be found were Nexxen ??? at €150 per tyre or Continentals ranging from €300 take away to €400 per tyre fitted !!.......bonkers !

Bit late but my folks have a place in Curracloe ... I've used Top Tyres on the main road to the town coming from Castlebridge, opposite Maxol. Have used them for 10 years never had an issue and are the main guys for Bridgestone ... Might be worth a look next time you're down there! Ask for John!
