Sounds like your thermostat is stuck open, did you have that replaced while the water pump was getting done?

Edit: Just re-read and you mention the stat is working, did you remove it and throw it in hot water to see it actually move? If your engine is m42 the stat can be removed from the housing and it's cheap enough to replace, if the engine is m44 I think the entire housing has to be relplaced as the stat is formed into the housing.
