How about the Ring of Kerry Eamo? Have a romantic dinner and stay in Sheen Falls while you're nearby.

The coast Road from Dungarvan to Tramore (40mins) is a real 'TopGear' road. It has everything. There are two decent straight stretches mixed between winding slow/fast bends, both uphill and downhill. The scenery is also second to none.
Before Dungarvan, you should visit Ardmore, very picturesque. After Tramore you need to visit Dunmore East. All this could potentially be done in one day.

The road between Lisdoonvarna and Ballyvaughan is a cracker, particularly the Corkscrew section. You need to be up early to avoid the campervans, buses, rentals, cyclists etc but well worth it.
