€700 sounds about right for someone older on a sports bike, I'm 35 with a provisional and I paid €550 on a 695 Monster.
You might struggle to get a quote on a sports bike because of your age.

I’ll just see how it goes doing a grade 2 skills assessment also with instructor which will certify me to insure sports bike
But at what price is anyone’s guess ��
